Two holiday favorites, rolled into one
These rolls take everything you love about a classic cinnamon roll and swap the usual brown sugar swirl for real sugar cookie dough. The filling bakes into soft, buttery layers with a hint of almond and cinnamon, and the nonpareils turn every swirl festive.
The dough uses a tangzhong: a quick cooked paste of milk and flour. It holds extra moisture, so the rolls bake up tall and tender and stay soft the next day.
Step 1Cook the tangzhong
Whisk milk and flour over medium-low heat until it thickens like pudding. Let it cool.
Step 2Wake up the yeast
Warm milk, sugar and yeast sit for 5 minutes until foamy. Add butter, eggs and extracts.
Step 3Knead the dough
Work in the flour gradually and knead until smooth and soft, adding flour only as needed.
Step 4Let it rise
Cover and rest somewhere warm until doubled, usually 1 to 1½ hours.
Step 5Make the cookie filling
Cream butter and sugar, beat in the egg and extracts, then mix in flour, cinnamon and salt.
Step 6Spread and sprinkle
Roll the dough into a rectangle, spread the filling to the edges and shower with nonpareils.
Step 7Cut, roll, rise again
Cut about 12 strips, roll each one up and nestle them in a lined dish. Rise 25–35 minutes.
Step 8Bake and frost
Brush with cream, bake at 350°F for 25–30 minutes, then frost while slightly warm.
